to make the broth
  1. In a large vessel, add oil, vegetables and spices and sautee them well
  2. Add water and bring the entire mixture to a boil
  3. Reduce the heat and simmer the entire mixture for another hour
  4. Drain the entire mixture and seperate the vegetables and the clear broth (yumm!!!)
Assemble the noodles
  1. In a wok, add a little bit of oil and saute some onions, garlic and vegetables
  2. Sautee them only for a couple of minutes o=so that they are cooked but still remain crunchy
  3. Add the tofu cubes and sautee for a min.., (season with salt and pepper)
  4. To Serve : in a bowl – add some hot broth, layer with noodles and vegetables.
  5. Add fried julliene ginger for the extra kick (add a little lemon juice if you want to add a lil zing to the soup)..Njoy!!!
